King Crab Legs / Crab Meat Recipes

Sautéed King Crab in White Wine
6 tablespoons extra-virgin olive oil
2 pounds cooked king crab legs, cut into 6-inch pieces
1/4 cup chopped scallions
1 tablespoon chopped parsley leaves
1 teaspoon red pepper flakes
1 1/2 cups white wine
1 lemon, juiced
1 lime, juiced
4 tablespoons butter
Salt and freshly ground black pepper
Heat the oil in a large skillet over medium-high heat. Add the crab legs and
cook for 2 minutes. Add the scallions, parsley, red pepper flakes, and wine and
cook until the wine has reduced by 1/3, about 6 to 8 minutes. Add the lemon and
lime juices and cook for another 2 minutes. Stir in the butter, 1 tablespoon at
a time, to thicken the sauce. Taste and adjust the seasoning with salt and
pepper. Serve immediately.
Stuffed King Crab Legs
* 3 packages (12 ounces each) precooked, frozen king crab legs
* 1 can (4 ounces) mushroom stems and pieces, drained
* 2 tablespoons melted butter
* 2 tablespoons flour
* 1/2 teaspoon salt
* 1 cup milk
* 1/2 cup grated cheese
* paprika
Preparation Instructions:
Thaw frozen crab legs. Remove meat from shells. Remove any cartilage and cut
meat into 1/2-inch pieces. Cook mushrooms in butter for 5 minutes. Blend in
flour and salt. Add milk gradually and cook until thick, stirring constantly.
Add cheese and crab meat; heat. Fill shells with crab mixture. Sprinkle with
paprika. Place stuffed crab legs on a grill, shell side down, about 4 inches
from moderately hot coals. Heat for 10 to 12 minutes. Serves 6.
Cooking on the grill is especially appealing for a summer evening. Here's a
menu that can be assembled quickly and easily with a little planning--sliced
tomatoes, corn-on-the-cob, stuffed king crab legs and for dessert, have pound
cake with a fresh strawberry and banana topping.

Grilled King Crab Legs
* 3 packages (12 ounces each) precooked, frozen king crab legs
* 1/2 cup butter, melted
* 2 tablespoons lemon or lime juice
* 1/2 teaspoon paprika
* melted butter
Preparation Instructions:
Thaw frozen crab legs. Combine butter, lemon juice and paprika. Baste crab meat
with sauce. Place crab legs on a grill, flesh side down, about 4 inches from
moderately hot coals. Heat for 5 minutes. Turn and baste with sauce. Heat 5 to 7
minutes longer. Serve with melted butter. Serves 6.
The meat is meltingly tender and moist when prepared this way on the grill.
Lump Crab Meat Dip
* 1/4 cup cream
* 2 tablespoons mayonnaise
* 1/2 teaspoon salt
* dash of Tabasco sauce
* 1 pound lump crab meat
* 1/4 cup lemon juice
* 2 sliced green onions & tops
* 1 teaspoon Worcestershire sauce
* 8 ounce cream cheese
Preparation Instructions:
Blend together until smooth all ingredients except crab meat. Add crab meat and serve with raw
vegetables, such as green peppers, radishes, celery and/or cauliflower buds.

Baked Crab Cakes
* 1 lb. Jumbo Lump crab meat
* 2 Tbsp. fresh lemon juice
* 2 tsp. olive oil
* 1 Tbsp. butter
* 1/2 cup finely chopped onion
* 1 tsp. Old Bay seasoning
* 1/2 tsp. fresh minced garlic
* 1/8 tsp. crushed dried tarragon
* pinch of cayenne pepper
* 2 Tbsp. mayonnaise
* 6 saltine crackers, crushed fine
* 1 large egg, beaten
* 1/4 cup grated sharp cheddar cheese
* 3/4 tsp. Hungarian paprika
Preparation Instructions:
Toss crab meat with the lemon juice, refrigerate. Sauté onion with butter and olive oil over medium
heat until barely limp, about one minute. Transfer to a small bowl to cool. Mix together Old Bay,
garlic, tarragon, cayenne pepper, mayonnaise, crackers, and beaten egg. Add the onions and mix
well. Fold gently into the crab meat. Divide into 6 portions. Butter a baking dish that will fit
your broiler. Roll the crab into 6 large balls, put on buttered dish 2" apart. Bake at 400 degrees
for 15 minutes. Remove from oven and flatten each ball a little. Sprinkle each one first with the
cheese and then the paprika. Broil to toast the cheese a bit. Serve hot.
